In-Salt Fusion is very easy to use, and the result is nothing short of delicious.
Choose a piece of pork belly that is an even thickness throughout. Turn the pork belly over and score the underside side deeply. Shake the Fusion rub over and rub in firmly. Turn over so the skin in uppermost. Sprinkle lightly with olive oil and cover with Fusion. Rub lightly into the skin.

Place dressed meat into lowish sided baking dish and cook in a pre-heated oven at 220 degrees C for about 30 mins. Then turn down to 180 Degrees C for at least 1 ½ hours.
We prefer to cook it slower and longer. The degree to which the skin will crackle depends on a number of things, the thickness of skin, amount of fat (this is usually a case of more rather than less, but not too much).
When cooked to your satisfaction, remove from oven. Place on a board and leave to rest for at least 20 mins before cutting into squares and serving.
